By combining two recipes and cooking methods, I have successfully made a batch of baked endive croquettes. These are made from scratch, with honest and simple ingredients. Admittedly, the baked version did not turn out to be crispy and crunchy as their deep fried counterparts would have been, but they are delicious. These days, I prefer healthy and delicious over deep fried and delicious. 😉
Next time, I will try using panko instead of bread crumbs when breading the croquettes. Maybe that will result in a crunchier crust.
