Banana & Cream

What does one do with three ripe bananas and a box of pastry cream expiring next month, before a heatwave? Make a banana cream pie, of course. 😉

I have made this before, using a store-bought pie crust. But this time, I made my own. The buttery cookie dough crust was not easy to handle in this warm weather. The end result turned out a bit thick and rustic, but only on the inside. The filling covered it. Looks does not matter when it is for my own consumption, I just want it to taste good. Looking forward to a piece of chilled banana cream pie in the warm days ahead.
